How we clean and season our skillets
We receive a lot of questions on how to clean cooked on grease from a cast iron skillet without hurting them. We will tell you how we go about cleaning our skillets, however, we do not suggest you try this at home. We use lye which can cause severe burns if it comes into contact with your skin and also gives off fumes that could cause damage to your lungs if not kept in a very well ventilated area. Again we will not accept responsibility if you decide to try this yourselves.
We clean our skillets by placing them in a heavy plastic drum that has a strong solution of lye and water. We keep this drum in a well ventilated shed that we have secured so that no persons or animals can get inside. It is very important that we use elbow length heavy rubber gloves as the lye solution can cause very bad burns to the skin. We soak the skillets in the lye solution from 2 days to 2 weeks depending on how bad the burnt on grease is. Then we rinse them with cool water and use a soft bristled brass brush to brush away any remaining grease. Eye protection is also a must while doing this.
After the skillets have been cleaned, rinsed and dried we season then to keep them from rusting. This is a very easy step. All we do is wipe them down with a heavy coat of cooking oil/ vegetable oil and place them in an oven for about 3 hours on 200 degrees. After we remove them from the oven and they have had a chance to cool, we wipe off any excess oil and they are ready to hang on the wall for display.
Just one more time for the record. If you have a skillet that you wish to have cleaned, please take it to someone who has experience working with lye and let them do it for you. Also never let children anywhere near lye and don't try this at home. We have only placed this information here to let you know how we do our skillets and this information is not directions for how anyone else should clean skillets. Again we will not accept responsibility if you decide to try this yourselves, working with lye can be dangerous.
